Healthy Homemade Muesli Packets – hot or cold

Most days I’m fine with making the girls’ brekkie. It’s a morning ritual, we talk about the day ahead, what needs to be done to get to school and what’s coming up tomorrow or the next day. But some mornings are just well, hideous and I need them to make something for themselves that tastes good (otherwise they won’t eat it) and is good for them (otherwise I veto it). They love porridge and I guess I could have some standby porridge packets from the supermarket for them to pop in the microwave (we love our porridge around here), but I like to take it one step further and make my own. And so I do.

If you’re a muesli lover, you’ve probably come across a couple of homemade muesli recipes here on the site but this one is different. This one you can eat hot or cold. Yep, you can have it straight up and crunchy with cold milk or you can heat it up in the microwave and turn it into creamy muesli porridge. Love. It! Two for the price of one.

I use a combination of traditional oats which are low GI and quick oats as they cook quicker and break down easier. If you don’t have both traditional and quick in the cupboard, just pulse some traditional a bit so the flakes are smaller. To my lovely oats I add whatever I have in the cupboard. For today’s recipe I’ve added:

  • Chia seeds – a superfood powerhouse of iron, vitamin c, potassium, fibre, protein and omega 3.
  • Pepitas – (pumpkin seeds) are high in manganese, magnesium, protein, iron, tryptophan and zinc.
  • Cinnamon – lovely flavour but also an anti-inflammatory and helps to control blood sugar levels.
  • Chopped nuts – healthy unsaturated fats.
  • Orange zest and juice – beautiful flavour with the added bonus of vitamin c.

So you can see why I LOVE making my own, it tastes great and the kids get a complete breakfast that will keep them going at school. I make it on the weekends and pop individual serves into little bags with the instructions for how to prepare it.
