Healthy Pork and Fennel Sausages

Confession: I just couldn’t live without sausages

It’s been a while since I’ve confessed so here it is: I simply could NOT live without sausages. I love sausages. For me, they are one of the true comfort foods. Serve them with mash and gravy and I’m already curled up on the couch in my pjs watching a Jane Austen movie – pure, unadulterated slothful bliss……

And whilst I love all sausages (and I really, really do), I feel guilty about eating them and guilt is not an emotion I enjoy. Why the guilt? You see, most sausages are made with a lot of unnecessary fat and salt which makes them an occasional food for me. Being the sausage lover that I am, ‘only on occasion’ doesn’t work.

When I need bangers and mash, I NEED bangers and mash. It’s a moodie thing….. Not to be denied, I thought and tested, tested and thought and came up with my gorgeously tasty pork and fennel sausages. They are light and low fat and my girls absolutely adore them which is always a bonus.

But everyone knows you can’t have bangers without mash. I had to have mash, and perhaps a little gravy…… You already know that I love a good mashed potato (who doesn’t?) but I wanted to try out something different. I wanted a mash that was non-potato-starchy-carb; it’s better for digestion. That’s where my fennel mash comes in.

It’s not thick and fluffy like potato, but it’s definitely creamy and yum and goes oh so well with the pork and fennel sausies. I brought it all together with my lovely onion gravy and had a Comforting Couch Potato masterpiece worthy of a cold rainy night in front of Sense and Sensibility. I was a happy, happy girl…….

Oh, and in case you were wondering about the humble sausage and the hassle of making your own, ponder this: Moodie sausages (125g) = 210cals, 8g total fat, 3g saturated fat and 133mg sodium. Your average pork sausage (125g) = 241cals, 17g total fat, 8g saturated fat, 661mg sodium. It all adds up when you love you sausages as much as I do. Happy Eating!
