Easy, Low Kilojoule Pub Favourite

Ever had a Pub Parma? Oh my, they are sooooo good but so bad if you know what I mean. All that crumbed, deep fried (or at best, cooked in mucho oil and/or butter) chicken topped with cheese is just not good for us most of the time – although, every now and then is absolutely okay don’t you think?

But me being me, I have to eat what I want and if I want a Chicken Parma it’s best to have a healthy lighter version up my sleeve to avoid the walk of shame to the Pub. This recipe is light, healthy and really, really easy. In fact, it reduces the kilojoules/calories substantially and cuts the fat content in half. Here’s the lowdown:

Moodie Parma: 1289kj (306.9 cals); 12.3g total fat (4.9g saturated fat)
Traditional Parma: 1752kj (418 cals) 29.4g total fat (9.5g saturated fat)

Now if you’ve never had a chicken parmigiana and have absolutely no idea what all the fuss is about, here’s the skinny. The traditional version is a crumbed piece of chicken that’s either deep fried or cooked in oil, topped with a slice of eggplant, tomato sauce and smothered with cheese. Not so skinny, huh? Now the Moodie version is a lovely lean skinless chicken breast, topped with a creamy slice of eggplant, gorgeous garlicky tomato sauce and bocconcini (you know that lovely white mozzarella?) or light mozzarella. So skinny.

This yummy little healthy redo is so easy and quick. You just make a simple tomato sauce which takes about 10 minutes, cook some eggplant slices in a little oil (while the sauce is cooking), slice 4 small chicken breasts horizontally in half so each one makes 2 thin steaks, top each piece of chicken with eggplant, tomato sauce and some cheese and then whack it in the oven for 15 minutes until the chicken is cooked. Done! Serve it with a big salad or vegetables of your choice and you’ll be a happy camper. If you’re addicted to a parma and chips, make your own (LINK).
