So over the last week we’ve had Healthy Pulled Turkey, Mango Avocado Salad with Lime Vinaigrette, Very Berry Salad with Orange Vanilla Syrup and Orange Sesame Baked Salmon. Oh yum, just give me a sec I need to wipe the drool from my keyboard…..

Okay, I’m back. I’m finishing my healthy Christmas Day recipes with two lovelies – Fennel Orange Salad and Low Fat Mango Passionfruit Trifles.

Let’s start with the salad. Carrying on with my Moodie Christmas theme this salad is truly special, easy and light. It’s made by slicing two fennel bulbs and two oranges thinly and tossing through a lovely light vinaigrette. I use a mandolin for slicing anything thinly as it’s just so quick and easy. If you don’t have a mandolin but you do have a thin slicing blade on a food processor, get into it. If you don’t have either, using a sharp knife works just as well (I’m just lazy and like to cut down on work, even though there’s not much involved. Like I said, lazy……). Once you’re done slicing, it’s just a matter of making a quick vinaigrette and voila, Christmas salad done. Oh yum and it’s so elegant to look at – love a pretty salad…..

Now onto dessert. Ever since I can remember we’ve had trifle at Christmas. It just wouldn’t be Christmas without trifle. But you know what comes with trifle don’t you? Cream and custard with a little more cream for good measure. Oh stop, my buttons are popping just thinking about it.

But not this year. This year, I’ve come up with a yummilicious mango and passionfruit trifle that’s light and easy and oh so special. I’ve deliberately made individual ones so I’m not tempted to have just one more loaded spoon (you’d be surprised how much I can get on one spoon).

So what’s the secret to keep it light? I’ve replaced the custard with light custard and kept the cream for a swirl on top. I’ve also done something that I don’t normally do and gone for cream in a can. I KNOW! Cream in a can! But the great thing about cream in a can is that it swirls without any special effort from me (great, cause I’m really bad at that stuff) and also it’s light and airy so you need less of it and less of it means less calories and fat. Can I get a Christmas woot, woot? If you just can’t bring yourself to use swirly cream in a can, drizzle a little light cream over the top or whip a little full fat cream and dollop on top. If you use only a little, it’s not going to make too much difference.
