Creamy Vege Lasagne

Guilt-free lasagne – only 259 calories for a BIG piece

If you’re anything like me when it comes to lasagne, you’re a little piggy snorter. Small pieces just don’t cut it when it comes to this wonderful Italian slice of heaven. I need a big, BIG piece.

And because size matters when it comes to the lasagne on my plate, I’ve had to teach myself how to lighten it up without losing any flavour. I started with the traditional meat lasagne using extra lean mince and replacing some of the pasta with vegetable pasta – Amazing! And then my girls went pescatarian on me (vegetarian with seafood but no extra lean mince, Mum). So I had to get creative cause there was no way, NO WAY I was missing out on my lasagne. I’ve made several different versions which I’ll share over the next little while – all of them yummy and as tasty as all get out.

But today, I’m sharing my creamy vege lasagne. Yep, it’s exactly how it sounds – loads of vegetables and creamy sauce. Mmmmmmmm. And best of all (besides the taste) is that for a whopping piece, it’s only 1088 kilojoules (259 calories), a miniscule 5.2 grams of total fat (1.2g saturated) and an acceptable 5 grams of fibre. Yay! Lovely Italian comfort food that’s actually good for you. Did I mention Yay! It’s these recipes that make me happy……
