Confession: Chicken soup really is good for the soul

Soup in general is good for the soul, don’t you think? When it’s cold, windy, rainy and generally blurk outside, it’s hard to beat a big bowl of steaming hot soup. In fact, I don’t think that I’ve ever met a bowl of soup that I didn’t like. From light broths to hearty bowls that border on stew, I love them all.

And homemade soups? The best on the planet. They don’t take much time and you can make large pots, freezing some for those days when even pushing the button on the microwave is a chore. The choice of what you put in your soups is endless and so there’s always something for everyone, even the picky ones like my Elly (her favourites include anything with dumplings or won tons). Mia will eat any soup just like her Mum.

Today I’m bringing you Chicken Soup with Dumplings. Mmmmm, chicken soup with winter veges and plump little doughy dumplings. It’s one of my favourites and has been inspired by a Jamie Oliver soup that I’ve been cooking for the last 10 years. I like this one better (as I would) as it’s lighter but still has the richness and creamy finish of Jamie’s. It’s a meal in itself, you don’t need anything to go with it which makes it ideal for those winter weeknights when your soul needs soothing and only comfort will do.

I’ve made my dumplings using a combination of flour and quinoa but you could just as easily use all flour or a mixture of flour and cornmeal. Whatever you use, it’s going to taste amazing; dumplings cooked in tasty soup, how could you go wrong?

It’s cold and windy here in Melbourne (I know, I know, it’s no surprise to anyone) and so I’m off to the kitchen in search of soothing comfort.
