Chicken Quinoa Pilaf

Perfect light, super healthy spring recipe

Are you a fan of quinoa? I am. Love. It. It tastes great (almost nutty), goes with just about everything (great replacement for rice, couscous or pasta) and is so incredibly good for you. Let me explain….

Commonly thought of as a grain, quinoa is actually a seed which makes it a fantastic option for gluten intolerant bodies. It’s also high in protein, iron, fibre, Vitamins B6 and B12, magnesium, tryptophan and manganese. Sold on quinoa? Oh yes indeedy.

This lovely pilaf dish uses quinoa instead of rice. Now don’t get me wrong, I love rice, but I wanted to mix it up a little to see if it worked with quinoa. And it does. Cooked in stock with spices, lean chicken breast and green vegetables this makes for a wonderfully healthy dish. I’ve finished it off with a little light coconut milk for extra creaminess and coriander for freshness. And it’s so YUM!

The recipe serves 4-6. We have bigger and smaller eaters in our house so it serves 4 for dinner with leftovers for my lunch the next day. Bonus.
