Avocado Salad Dressing

Low fat, low joule, healthy and oh so beautiful

It’s been a while since we’ve had a Quickie – and by that I mean a dressing, sauce or little something that makes a dish zing and do the odd cartwheel or two. To tell you the truth, I can’t think of a better salad dressing to bring you in the return of the Quickie. It’s creamy and tasty and eye-rollingly good. But most of all, it’s low joule/cal, low fat and really, really good for you.

I don’t know if you remember, but back in the ‘80s the appetising avocado got a bad rep. So bad that health professionals told us to stay away as avos were too high in fat. But what we know now, is that it’s good fat – unsaturated fat that’s good for our hearts and cholesterol levels. Not only that, avocados are packed with antioxidants so we’ll look better and feel fantastic.

Co-starring in this gorgeous creamy concoction is buttermilk for extra creaminess and tang (also naturally low in fat), a bit of garlic and spring onion for flavour, lime juice for freshness, and Tabasco for spice. Oh yummy, yum, yum. And did I mention that it goes with just about everything?

Yes I’ve used this dressing to lift a few green lettuce leaves, but I’ve also coated potatoes in a potato salad, I’ve poured it on coleslaw for a creamy greeny kick, I’ve drizzled it over prawns a la prawn cocktail, and I’ve even tossed it through pasta for a healthy sauce.

Go on and try this diva of all dressings, you won’t regret it I promise.
